Hey it's been a while, but I remember you :)  Only speaking about the C128, there has been...

Hardware: Richard42 made a limited production run of a video DAC that can be used with VGA adapter to display 80-column mode on standard VGA monitor.  Sold out, but an interesting read.

80-Column Software: Tokra made a 640x480 video mode with 8x2 color resoultion (see here) and another slightly smaller (and not interlaced) mode of 480x252 with higher color density of 8x1 (see here).  The images look really nice but you need 64K vRAM on a real machine (does not work in VICE).

40/80 Column software: I release beta version Media Player 128.  The GUI works in both modes and of course you can hear the audio in either mode, but the videos only play in 40-column mode.

Well I'm sure there are other things people could recommend, but those came to mind first.
I'm kupo for kupo nuts!

Two prototypes of a new C128 VGA adapter, based on Richard's design, were shown at CommVEx yesterday.  A new production run is to come later this year.
